Teriyaki Rice with Aubergine & Mushrooms
Roasted mushrooms, aubergine and broccoli in a teriyaki sauce with jasmine rice and pickled cabbage slaw.

- A super sticky teriyaki jasmine rice bowl, the sauce coats the whole dish so you get it in every mouthful.
- We have roasted aubergine and 3 different types of mushrooms, for added flavour & texture to the dish.
- We've added a fresh broccoli and a super fresh slaw of cabbage, carrots and sesame.
Try it with:
- Serve with a red & white cabbage, carrot and spring onion slaw.
- Some spicy kimchi.
- Delicious vegetable gyozas!
Asian ‘slaw recipe:
Ingredients:

½ red cabbage, thinly sliced

¼ white cabbage, thinly sliced

1 medium red onion, thinly sliced

1 fennel, thinly sliced

1 red chilli, finely sliced (de-seed if you prefer)

5 spring onions, finely sliced

1 large carrot, grated
Dressing:

2 tbsp toasted sesame oil
-
2 tbsp rice wine vinegar
-
2 tbsp olive oil
-
Zest and juice of 1 lime;
-
Small bunch of fresh mint, roughly chopped

Small bunch of coriander, roughly chopped

Heaped teaspoon of Easy Ginger and a splash of the juice

Mix and sprinkle with sesame seeds
