- We oven roast the butternut squash and beetroot in rapeseed oil and thyme.
- We make our own homemade red onion marmalade by slow-cooking them until sweet and sticky. It balances the earthy flavours of the beetroot perfectly.
- We finish it with vegan puff pastry which forms a lovely crisp base when served upside down as a proper tarte tatin.
