Higher-welfare British chicken pieces, marinated in basil, in a creamy mascarpone and tomato sauce, with baby spinach and semi-dried tomatoes.

- We use higher-welfare chicken which we marinate in rapeseed oil and basil for a couple of hours before cooking.
- Our delicious tomato sauce is made with passata, mascarpone and double cream - which we blend together with some basil paste (similar to a pesto, but more intense!).
- The dish is finished with fresh baby spinach leaves and semi-dried tomatoes. It's a perfect family friendly dish and great stirred through pasta.
Try it with:
- Lovely with Plain Basmati Rice and some petit pois.
- Serve with pappardelle, garnished with toasted pine nuts, fresh torn basil leaves and some parmesan (or baby mozzarella pearls if you're feeling extra fancy).
- Serve with some roasted Hasselback potatoes and some seasonal green veg - Tenderstem broccoli always works well.
