How We Make It At Our Kitchen

  • We braise quality lamb mince, then add it to a rich tomato sauce with lots of mint.
  • The aubergines are roasted with oil and cumin, to reduce the water content and lock in the taste.
  • The ricotta makes for a deliciously light cheese sauce, and there’s a Cheddar crumb on top, which gives it some lovely colour when you cook it at home.
