How We Make It At Our Kitchen
- Packed with roasted sweet potato, parsnips, kale and speckled green lentils in a rich tomato sauce.
- For the sauce we fry off some garlic before adding onions and cooking until soft. We then add rosemary, thyme, vegetable stock and tomato puree and cook this off for a few minutes to bring out the flavours from the herbs. We then add chopped tomatoes and red wine and simmer this sauce for around 45 mins until all the flavours are really well developed. This is then mixed together with the veg and lentils.
- Finally it’s wrapped in our delicious hand-prepared shortcrust pastry.
