Cucumber and Mint Raita recipe

As simple to make as it is delicious, this raita is perfect on top of a spicy curry or as a dip for crispy pappadums.
Ingredients
250ml Natural Yoghurt
½ Cucumber, grated or finely chopped
Handful Mint Leaves, chopped
Pinch of salt
Preparation
No cooking required! Just mix the ingredients together, then put it in the fridge. You can squeeze the chopped cucumber in a tea towel to reduce the water content if you like. If you want to give it a kick, another option is to add half a finely chopped green chili.
Done! Easy.
