It’s time for another Dish of the Dale. This week we’re singing the praises of our ever-popular and extremely tasty Chicken Alexander.
Back in the early days of COOK, Dale made a version of the 70s dinner party classic Chicken à la King. He liked it so much he renamed it Chicken Alexander, giving it one of his middle names. (He’s keeping the other one, Colchester, in reserve.) Roast chicken breast, Fino sherry, mushrooms, onions, red and yellow peppers, French white wine, double cream, parsley, chives … this is truly a dish fit for a king. Or an Alex.
