Bananas in Coconut Syrup
(serves 2)
A simple but exotic-tasting dessert with sweet bananas and fragrant coconut balanced by a hint of salt.
Ingredients:
110g Granulated Sugar
110g Water 2 large, slightly under-ripe Bananas
60ml Coconut Milk Large pinch of Sea Salt
Preparation:
Place the sugar and water in a pan and heat until the sugar dissolves. Bring to the boil. Peel the bananas and slice on an angle into 2 inch pieces. Drop into the saucepan of boiling syrup and lower the heat.
Cook the bananas gently until they turn clear and bright and the syrup forms shreds when lifted into the air with a wooden spoon.
Add the salt to the coconut milk and serve alongside the sticky bananas.
Alternatively, finish your meal with a platter of exotic fruits: try arranging slices of watermelon, mango, pineapple and dragon fruit.
