Asian Slaw Recipe

Our brilliant chef SJ shares a recipe for a delicious (and surprisingly light) slaw. Easy to knock up at home, this is destined to become your side of choice for the summer.
Slaw

Purple or green cabbage 1/4 or each, very finely sliced

Mango 1 /2 finely sliced

Carrot 1, grated

Roasted peanuts or cashew nuts 80g roughly chopped

Toasted sesame seeds 1 tablespoon

Mint and coriander handful each chopped

Red chilli 1, finely chopped (optional)
Dressing

Sesame oil 2 teaspoons

Soy sauce or fish sauce 2 ½ tablespoons

Juice of one lime
-
Rice wine vinegar 1 tbsp

Extra-virgin olive oil 1 tablespoon

Brown sugar 10g
