Asian Slaw Recipe

Our brilliant chef SJ shares a recipe for a delicious (and surprisingly light) slaw. Easy to knock up at home, this is destined to become your side of choice for the summer.
Slaw
- Purple or green cabbage 1/4 or each, very finely sliced
- Mango 1 /2 finely sliced
- Carrot 1, grated
- Roasted peanuts or cashew nuts 80g roughly chopped
- Toasted sesame seeds 1 tablespoon
- Mint and coriander handful each chopped
- Red chilli 1, finely chopped (optional)
Dressing
- Sesame oil 2 teaspoons
- Soy sauce or fish sauce 2 ½ tablespoons
- Juice of one lime
- Rice wine vinegar 1 tbsp
- Extra-virgin olive oil 1 tablespoon
- Brown sugar 10g
