Asian Slaw Recipe

Our brilliant chef SJ shares a recipe for a delicious (and surprisingly light) slaw. Easy to knock up at home, this is destined to become your side of choice for the summer.

Slaw

  • Purple or green cabbage 1/4 or each, very finely sliced

  • Mango 1 /2 finely sliced

  • Carrot 1, grated

  • Roasted peanuts or cashew nuts 80g roughly chopped

  • Toasted sesame seeds 1 tablespoon

  • Mint and coriander handful each chopped

  • Red chilli 1, finely chopped (optional)

 

Dressing

  • Sesame oil 2 teaspoons

  • Soy sauce or fish sauce 2 ½ tablespoons

  • Juice of one lime

  • Rice wine vinegar 1 tbsp

  • Extra-virgin olive oil 1 tablespoon

  • Brown sugar 10g
