Shrikhand

Shrikhand is an ancient Indian sweet dish made of strained yogurt, but we suggest Greek Yoghurt, as it’s already nice and thick. It is one of the main desserts in Maharashtrian cuisine and Gujarati cuisine (but you knew that, right?), and makes for a quick, authentic desert to any Indian meal.
Ingredients
1kg full-fat Greek Yoghurt
150g Icing Sugar
A few strands of Saffron
1 tbsp warm Milk
2 tsp ground Cardamom
Chopped Pistachios
Flaked Almonds
Pomegranate Seeds
Preparation
Warm the milk slowly in a small saucepan, then add the saffron until it dissolves. Then mix together the yoghurt, sugar, saffron mixture and cardamom in a bowl and blend thoroughly using a hand blender.
Just before serving, garnish with the pistachios, almonds and pomegranate seeds.
