Pork Skewers

(makes 4 skewers)

Skewers are the ultimate portable Thai street food snack, and they also make great canapes. This recipe is rather adorably named ‘moo ping’. Marinate the meat the day before to save time on the day.

Ingredients:

Pork & marinade

250g Lean Pork Sliced into 11/2 inch by 3 inch pieces

1 Garlic Clove, chopped

Small handful Coriander (including the stems), chopped

2 tbsp. Fish Sauce

½ tbsp. Light Soy Sauce or Tamari

60 ml Coconut Cream

1 tbsp. Vegetable Oil

½ tbsp. Demerara or Palm Sugar

Chilli sauce

1 tbsp. Fish Sauce

2 tbsp. Lemon Juice

1 tbsp. Light Soy Sauce or Tamari

1 tsp. Chilli Powder

1 tbsp. Demerara or Palm Sugar

1 tbsp. Coriander, chopped (And you’ll need some skewers of course!)

Preparation:

Combine the marinade ingredients and mix together well, making sure all the meat is thoroughly coated. Leave for at least 30 minutes or overnight.

Mix all the sauce ingredients in a bowl, adding the chilli powder to taste. Set aside.

Preheat the grill to high. Thread 2 pieces of meat onto each skewer, spreading the meat along so that it will have good contact with the grill. Grill for 2-3 minutes each side or until the meat is thoroughly cooked. Serve with the sauce on the side.
