Mango Lassi recipe

This classic drink to go with an Indian meal can be as simple or as complicated as you like. The most basic version is just equal weights of yoghurt and fresh mango blended together.

If you want to get fancy, you can add cardamom, rose water, a little cream, fresh mint, some honey, or any number of tweaks. We’d suggest you start with the recipe below then add or subtract ingredients until you’ve settled on your perfect version.

Ingredients

250g Natural Yoghurt

250g Ripe Mango, peeled and chopped (around 2 average-sized mangos)

2 Green Cardamom Pods or ¼ tsp Cardamom Powder

Sugar or Runny Honey to taste (2 tbsp should be enough!)

2 tbsp Single Cream

Mint Leaves to garnish

Preparation

Grind the cardamom pods with a pestle and mortar and remove the green husks. (Or just use cardamom powder!)

Peel and chop the mangos – you can use mango pulp if you can’t find fresh, ripe fruit – and place in a liquidiser with the yoghurt, cream, cardemom and a few ice cubes.

Blend until smooth and, if necessary, blend again after adding some honey or sugar for sweetness.

There. Done. Easy.
