Lentils with Spinach Spiced with Turmeric

Ingredients
Packet of frozen spinach
Packet of dried lentils
1-1 ½ teaspoons turmeric
2 cloves of garlic
Salt and pepper
Water (Tony prefers a bit of vegetable stock, but it’s not as healthy)
Greek yoghurt
How To Cook
1. Put a little water in the pan and add the chopped garlic for a few minutes. Chuck the dried lentils in a pan with a lid and cover with at least 2-3 cups of water or stock.
2. Add the turmeric and simmer covered for 20 minutes on a medium heat. Keep checking that there’s still a lot of water inside otherwise the lentils will stick and burn.
3. Add the frozen spinach (you will likely need to add additional water to cover Popeye’s favourite vegetable). Cover and continue to simmer for another 10-15 minutes.
4. Uncover, continue to simmer until the water has completely evaporated (usually another 5-10 minutes), but stir often. Season to taste with additional salt and pepper, and serve. Great as is, or you could top with a little Greek yogurt.
