Fennel, Radish and Celery Salad

Otherwise known as Jemima’s Ultimate Diet Salad. Whilst she was doing the diet experiment last year she found this recipe to be a delicious staple. These 3 ingredients combine to make a refreshingly crisp salad, perfect for calorie counters.

The crunchy sweet fennel contrasts perfectly with the pepperiness of the radishes. If you’d like a milder onion flavour, swap the half an onion for half a red onion, as these are milder than their white counterparts. You could even use spring onions here.

Ingredients
1 Fennel bulb
8 Radishes
3 Celery sticks
Half an onion
Handful of chopped dill
Glug of olive oil

How to make:
- Finely slice the fennel and pop into a big salad bowl
- Wash, top and tail and grate the radishes, add to bowl
- Finely slice half an onion, add to the bowl
- Add your finely chopped dill
- Drizzle a good slug of olive oil over it all, add a drizzle of honey balsamic vinegar and you’re ready to go.

TIP: The dill makes this particularly suitable for fish dishes – perfect with some grilled salmon.
