For this grand version, we’ve taken out the sometimes-divisive prawns and added more fish (all sustainably sourced), in a classic, roux-based sauce with white wine, sherry, cream, herbs and a squeeze of lemon. And there’s a different topping: a parsley and lemon crumb.

- There’s no need to be too fancy with a large fish pie as good as this. Just some Peas & Leeks or seasonal greens on the side are a perfect accompaniment.
