Scottish Salmon with Roasted New Potatoes
Two roasted Scottish salmon fillets on a bed of sautéed leeks and new potatoes, with a zingy crème fraiche, mustard, lemon and dill sauce.

- Remove the two salmon fillets once cooked, give the potatoes and leeks a good stir. Serve on a plate before placing the fish back on top.
- For a crispy skin, place the fish under a medium grill for 3-4mins once cooked.
- We sauté the leeks until sweet before adding to a creamy, mustard and white wine sauce. For a real hit, we use both Dijon and wholegrain mustard.
Try it With:
- Delicious with a simple rocket salad and a wedge of lemon.
- Easy to serve with some buttered French beans.
- Serve with griddled asparagus (when in season) or some Tenderstem broccoli.
