How we make it

Chicken breasts wrapped in sweet cure streaky bacon are roasted and placed on a bed of pearl & black barley risotto. Our risotto is made with onions, garlic, dried porcini mushrooms, sherry, double cream and thyme, and two types of barley, black and pearl. Portobello and chestnut mushrooms are roasted with garlic and thyme before being tossed in truffle oil and added to the risotto.

A dish full of earthy, hearty, rich flavours, lent a nutty flavour by the use of barley instead of the more traditional arborio rice. Black barley is 100% wholegrain and has a lovely rich sheen when cooked giving the dish a glossy appearance.

Serving Suggestion

Perfect served on it's own with shaved parmesan and a sprinkle of maldon sea salt and fresh thyme, or you could also serve it on a bed of slow roasted cherry tomatoes, or a rocket salad.

Ingredients

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example some of our curry pastes, which contain Citric Acid).

Chicken (33%), Water, Onions, Sweet-cure Bacon (8%), Portobello Mushrooms (8%), Pearl Barley (6%), Black Barley (4%), Dry Sherry [Sulphites], Light Vegetable Stock [Celery], Rapeseed Oil, Chestnut Mushrooms (2%), Double Cream [Milk], Dried Porcini Mushrooms, Grana Padano [Milk, Egg], Black Truffle Oil, Garlic, Parsley, Cornflour, Thyme, Rosemary, Salt.

Sweet-cure Bacon contains: Pork, Water, Salt, Dextrose, Preservatives: Sodium Nitrite, Potassium Nitrate, Antioxidant: Sodium Ascorbate. Cooking/Serving Instructions

OVEN COOK FROM FROZEN

Oven:

Preheat oven. Remove sleeve, pierce film. Cook in the top of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
35 mins > remove film > 5 mins
Allow to stand for 2 mins before serving.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the oven guidelines but cook for 15 mins, remove film, a further 10 mins.

Extra Warnings:

Although every care has been taken to remove all bones, some may remain.

Should this product defrost, keep refrigerated and eat within 2 days. Follow the oven guidelines but cook for 20 mins film on, then a further 15 mins film removed.
