Sweet-cure streaky bacon, fried until crispy is mixed with mature cheddar cheese and semi-dried tomatoes to form a quiche Lorraine style filling. The filling is placed in the pasty cases- by hand- and is topped with an egg mix made with free range egg, double cream, mascarpone (for added richness and smoothness) and parsley.
