How We Make It!

We take pieces of chicken thigh (the best cut for this dish as its more juicy and flavorsome than breast) and marinate in sesame oil, cornflour and honey, before roasting. To make the teriyaki sauce we mix together Tamari Soy Sauce (sweeter than normal soy), sherry, white wine vinegar, demerara sugar, garlic and ginger. The same ingredients are used to make a sticky glaze for the chicken, but this time the sauce is reduced to a thick, gooey consistency that will coat the chicken pieces all over to create the sweet, sticky glaze that's typical of teriyaki dishes.
