How We Make It
We marinate our fresh chicken breast with red pesto to give a delicious flavour, and then roast the chicken ready for the dish. We then partially cook our pasta for this dish to ensure that it is perfectly cooked when reheated by the customer. We make the sauce by firstly sweating down onions and garlic slowly in olive oil along with finely chopped carrots to create the base flavour for the sauce. We then add chopped tomatoes, tomato juice, blended red peppers and vegetable stock and allow this to simmer for 30 mins to develop a rich tomato flavour. The dish is finished with roasted red peppers as a garnish – delicious!
