This is a stunner: a whole side of salmon to share topped with a classic Italian blend of sweet cherry tomatoes, red pesto, herbs and pine nuts. The rich flavours infuse the flesh of the salmon while it roasts. A squeeze of lemon to serve sets it off perfectly.

Add some new potatoes on the side, with salad and lemon mayonnaise, and you’ve got the ideal summer lunch or supper, with the minimum fuss. This will serve four, generously, as a main course, or eight if you’re using it as part of a buffet – it’s also delicious cold.

Salmon (84%) [Fish], Red Pesto (6%) [Milk, Sulphites], Oven Roasted Cherry Semi Dried Tomatoes in Oil (6%), Pine Kernels, Water, Balsamic Vinegar [Sulphites], Lemon Juice, Basil, Sugar, Salt, Rosemary, Oregano.

Red Pesto contains: Tomatoes, Sunflower Oil, Cheese, Extra Virgin Olive Oil, Water, Salt, Vinegar, Dried Herbs, Garlic. Balsamic Vinegar contains: Wine Vinegar, Grape Must, Colour: Caramel, Antioxidant: Potassium Metabisulphite. Oven Roasted Semi Dried Tomatoes in Oil contain: Cherry Semi Dried Tomatoes, Sunflower Oil, Salt, Garlic, Oregano, Preservative: Lactic Acid.

Cooking/Serving Instructions

OVEN COOK FROM FROZEN

Oven:

Preheat oven. Remove from all packaging and place directly onto a baking tray in the centre of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
25-30 mins
Allow to rest for 2 mins before serving.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the oven guidelines but cook for 18-20 mins.
