A couple of very posh pies, with a sophisticated sauce included, so you only need to add seasonal veg on the side to create a truly remarkable meal. Our Silver Hill duck comes from an award-winning, family-run farm in Ireland where the birds are hand-reared to high welfare standards and fed on a natural diet. The farm has a zero carbon footprint and tries to make sure nothing is wasted (all the duck feathers go to stuff duvets and pillows, while the fat is used for biodiesel).

How We Make It
Our Chefs make a sour cherry chutney by sweating onions then adding cinnamon, ginger, balsamic vinegar, Merlot wine, Bramley apple, and chopped sour cherries and simmering to form a sweet and sharp chutney. The duck is roasted and shredded before being mixed with the sour cherry chutney to form the base of the pie. The duck mix is topped with a celeriac and rosemary mash made by enriching steamed celeriac and potatoes with butter, double cream and chopped rosemary. Our Pastry team make a rich all-butter shortcrust pastry which they cut into discs and wrap around the pies by hand, before glazing them carefully with egg yolk. The port and orange jus is made by reducing down some port, red wine, vegetable stock and orange juice before whisking in a dash of redcurrant jelly to form a glossy sauce to complement your pie.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example some of our curry pastes, which contain Citric Acid).

Defrost Instructions:
Should this product defrost, keep refrigerated and eat within 48 hours. Follow the oven guidelines but cook the pies for 25-30 mins. To cook the sauce once defrosted, follow the microwave guidelines but cook for 1 min.
Extra Warnings:
Although every effort has been taken to remove all bones, some may remain. Steam may be released when removing sauce lid.
