Christmas Leftover Brussel Sprout Coleslaw Recipe
Cold cut sarnies are always a huge draw, arguably one of the best bites of the year. That amazing annual doorstop of a sandwich, with pickings from the roast bird or nut roast, stuffing, apple sauce. Serve with a shredded sprout slaw from our Development Chef, Jo.
Ingredients
250g Brussels sprouts, finely sliced
½ small white cabbage, finely sliced/shredded
1 small carrot, grated
1 red onion, finely sliced
1 orange, segmented and juice squeezed from the middle
1 pouch of precooked chestnuts, crumbled
1 small bunch of parsley, finely chopped
2 tbsps. Greek yoghurt
2 tbsps. olive oil
Ground black pepper and salt to taste
Method:

Place all the ingredients in a bowl and mix thoroughly to combine.

Season with salt and pepper to taste.
