This salad is fresh from the mint and feta, with an underlying warmth from the cumin seeds. The crunchiness of the chick peas and cumin seeds compliments the popping sensation you get from the giant couscous.
Serving suggestion
Garnish with finely chopped mint.
Serve as part of a mezze (with hummus, baba ganoush, falafel and flatbread) for more informal, relaxed entertaining.
With just some warm flatbreads and salad it could make a meal in itself.
Once defrosted remove the salad from the fridge 30 minutes before serving – this allows the flavours to develop

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.
We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example some of our curry pastes, which contain Citric Acid).
Giant Couscous (46%) [Wheat Gluten], Feta Cheese (11%) [Milk], Chickpeas (11%), Honey (10%), Roasted Red Peppers (7%), Rapeseed Oil, Water, Red Wine Vinegar [Sulphites], Parsley, Mint, Dijon Mustard, Salt, Ground Cumin, Black Pepper, Turmeric.
Dijon Mustard contains: Water, Mustard Seeds, Vinegar, Salt. This product is made in our kitchen in Kent using ingredients of varied origin.

DEFROST TO SERVE
Defrost Instructions:
Defrost in the fridge for 24hrs. Before serving, stir well to mix the dressing through the salad evenly. (It will look its best if you remove the feta from the top before stirring and then replace to serve.) Keep refrigerated and eat within 48hrs.
